September is one of my favorite months. There’s something about Labor Day that reminds me of New Year’s Day. It’s the feeling of fresh beginnings that I like so much—the chance for a fresh start in a new academic year. Interestingly, tonight is also Rosh Hashanah (Jewish New Year), so Happy New Year to you all.
It’s the first day of school here at Bauman College for our new integrated Nutrition Consultant program. We are especially excited about this new 15-month program because it includes a supervised internship.
If you’re feeling wistful about starting school, there’s still time to register for our Fall 2010 classes: The Natural Chef Program doesn’t start for another 2 weeks! You can even register for the Nutrition Consultant Program. The absolute last day to start classroom-based Nutrition Consultant is September 23rd.. The late start is made possible by the fact that all of the course materials, audios, and lectures, etc. for the Nutrition Consultant program are now available online. This means that late registering Nutrition Consultant students can catch up to their classmates by studying the first few lessons online. Distance learners can, of course, start anytime.
If you’re like me, you understand that we are all life-long learners in the school of life. Keeping that in mind, you may want to join us at the end of September for the 8 evening lessons of Nutrition Essentials for Everyone. Each 3-hour class has 3 parts: a nutrition lesson, a cooking demonstration, and a class discussion designed to get you to move beyond theory and actually make changes in the way you eat.

Potential Protective Effect of Turmeric Intake Against Cancer
Bauman College values global cooking traditions that embrace plant-based, whole food choices. Herbs and spice seasonings are an integral part of the the Eating For Health™ model, where they are viewed as "booster foods" – those that in very small quantities put a lot of nutrients into our "health savings accounts." Increasingly, scientific research is confirming what Bauman College has been teaching for over 20 years.
Here is the latest research on the anti-cancer properties of turmeric, a common South Asian and Indian spice.
Summary: In a study involving healthy volunteers, results indicate that oral supplementation with turmeric tablets may increase plasma concentrations of geranylgeranoic acid (GGA), a potent cancer-preventive acyclic retinoid. Two hours after turmeric tablet intake, a significant increase in plasma GGA was observed, and this increased level was maintained for 4 hours. The authors state, "These results indicated that GGA in the turmeric tablet was absorbed as an intact form from intestinal mucosa." The results of this study suggest that GGA may have chemopreventive properties; additional research is warranted.

Kidz For Health
Turnkey Program Launches in Oakland
On September 14, the 6-week Kidz For Health™ after-school whole food nutrition and cooking-fitness program officially launches in Horace Mann Elementary School, in Oakland, California, a school with a high-percentage of economically disadvantaged students.
Thirty students in the fourth and fifth grades at Horace Mann will learn about Eating For Health™ and making healthy food choices. Their nutrition education will be hands-on. They’ll learn healthy food preparation, and whole food culinary skills in addition to understanding the connection between eating healthy, being physically active, feeling good, and preventing diseases such as obesity and diabetes.
Kidz for Health™ has operated programs successfully in Santa Cruz County since 2007, at the the Gault, Live Oak, and Del Mar Elementary Schools with funding from Bauman College. The launch of the program at Horace Mann School, also funded by Bauman College, is the final step of the creation of a Kidz for Health™ turnkey program which will be made available nationwide.

8 Lessons in Eating For Health
Bauman College is proud to offer its exciting personal growth program, Nutrition Essentials for Everyone. This 8-week series presents science-based nutrition information on the benefits of eating fresh, local, seasonal, and organic food.
Each 3-hour class includes a lecture, a practical culinary demonstration with tastings, and a personal behavior change segment where the class commits to eat better, manage daily stress, and overcome many years of poor health habits.
A Nutrition Essentials Workbook is provided to support the lessons. The Workbook offers fabulous recipes and cooking tips, and provides space for students to report on their home practice.
