I wanted to share with you my favorite gluten free pancake recipe.It's grain free and it's delicious! My kids love it while they get all the benefits of the coconut;)

Banana & Blueberry Pancakes
Serves 4

3 bananas
6 eggs
100 g coconut flakes
3/4 cup blueberries (frozen)
1 tbsp cinnamon
coconut oil

Mash the bananas with a fork. Whip the eggs and mix it together with the bananas. Add coconut, blueberries and cinnamon and stir it together.
Fry the pancakes on both sides in coconut oil on medium heat. Serve with coconut flakes, cinnamon and blueberries on the top.

Enjoy!!

Hi!
My daughter is on a gluten free diet and I'm always interested in trying a new recipe!  We have currently been buying different mixes and the pancakes taste so grainy, maybe she will like these better!  I'll try them and let you know what she says!

I am on a GF diet and I love pancakes. This grainless recipe sure sounds interesting. Thanks for posting it!

This recipe looks amazing! I eat gluten free and have been looking for a pancake recipe, especially one that involves coconut. Thanks so much!

These ARE so good! It's funny, I've been making a recipe very similar to this one that I found on a blog recently. I highly recommend them! I wonder if they would work in a waffle iron?
