I’ve always loved a good flourless chocolate cake but they’re not that easy to find. A huge benefit is that it’s gluten free. Add nuts for a traditional torte, nutrients and texture. I personally love this recipe and can guarantee your guests will too! It tastes incredibly indulgent ☺

¾ c (12T) butter, softened (plus extra for greasing pan)
6 oz semisweet chocolate
¾ c palm sugar
6 egg yolks
5 egg whites
1 ¼ c ground almonds
1 T vanilla extract
2 pinches salt

Preheat oven to 350º F. Grease a 9" spring form pan with butter and line bottom with parchment paper.

Melt chocolate in a double boiler. Set aside and let cool.

Place butter in a large bowl and beat until fluffy. Gradually add sugar and beat for 2-3 minutes. Add egg yolks one at a time, beating well between each one. Add chocolate until just blended. Stir in almonds and brandy; set aside.

Place egg whites in a large bowl and beat until medium-stiff peaks are formed. Add one third of egg whites to chocolate mixture and fold in with a rubber spatula. Fold in remaining egg whites in two batches. Pour batter into pan.
Bake for 15 minutes. Reduce temperature to 325º F and bake for a remaining 25-30 minutes or until a toothpick comes out clean. Allow to cool completely before serving.

Serve with raspberry coulis or warm berries. Enjoy!

Two notes:

There is nothing about brandy in the ingredients list, only in the instructions.

I made this cake twice, in different ovens, and both times it was done in 30 minutes total.  15 @ 325 and 15 @ 350. 

It came out great- everyone loved it!
