Vegetarian Kasha “Meatloaf”
Adapted from: The Body Ecology Diet
   
1 C buckwheat cooked in 2.5 C water with ¾ t sea salt for 45 minutes
1-2 T organic, unrefined coconut oil, butter or ghee
1 medium onion, finely chopped
4 cloves garlic, finely chopped
4 stalks celery, finely chopped
1 red pepper, finely chopped
1 T chili powder
2 C kale, stems removed & chopped
1 can water chestnuts, drained & chopped
1 bunch scallions, finely chopped

1.   Melt oil in a large skillet.
2.   Saute onions, garlic, celery, and red pepper until soft.
3.   Add chili powder, sea salt, black pepper.
4.   Add kale and water chestnuts & saute until soft.
5.   Add cooked buckwheat and saute all together.
6.   Taste and adjust seasonings.
7.   Fold in scallions.
8.   Place mixture in a lightly oiled loaf pan.
9.   Bake at 400 degrees for 45-60 minutes.

This looks delicious and a good way to incorporate buckwheat into one's diet... Thanks for the tip...
