Just made this tonight! It's from Carol Gelles' cook book 1,000 Vegetarian Recipes.

2 tbs butter---I used oil which worked well
2 tbs minced shallots
1 tsp curry powder
1/2 tsp ground ginger
1/2 tsp ground coriander--love the aroma of coriander!!
1/8 tsp ground red bell pepper
3 cups water
1 1/2 cups cubed and peeled sweet potatoes
1 cup diced mango
1/2 tsp salt

1. Melt butter (oil) over med-high heat and stir in shallots until they are softened, about 30 seconds. Stir in curry powder, ginger, coriander, and red pepper until absorbed.

2. Stir in water and bring to a boil. Add the potatoes and mango, reduce heat and simmer, uncovered for 30 minutes. Stir in salt.

3. Place half the soup in a blender or food processor container fitted with a steel blade. Cover and process until pureed. Repeat with remaining.

This soup makes your kitchen smell wonderful! It's got quite a kick so if that's not you're flavor preference, skip the pepper. It's a quick, simple, fun recipe (great combination of mango and sweet potato). Hope you enjoy!

Hi Stacy;
I was on the forum just casually looking through recipes and this one caught my eye.  It sounds great and I want to try it on the next rainy day we have.  In reviewing the recipe, I assume you mean either red pepper flakes or cayenne and not red bell pepper...  Anyway, I look forward to trying.  Thank you for posting.

I have to say, I don't believe I've ever added a fruit to any of my soup recipes.  I'm sure it's not uncommon but this one does sound delish.  Great for a summer soup.  I usually only make soups, well mosly, in the winter.  i'll give this one a try.  Thanks for the post Wink
