Today in class I made the nut and seed brittle which turned out to good. It's very simple to make and you could really made any variation with other sorts of nuts and seeds if you choose to, basically any that you had sitting around the house just keep the amounts the same. also throwing in some dried fruit wouldn't hurt also.

Ingredients:
1/2 cup maple syrup
2 cups sunflower seeds
1 cup cashews, coarsely chopped
1 cup almonds coarsely chopped
1/2 cup sesame seeds
1/2 cup flax seeds, ground or not your choice
2 tsp cinnamon
1/4 tsp salt
1 Orange, zested

Directions:
1. oil parchment paper and place on cookie sheet
2. put half the syrup in a bowl, mix sunflower seeds until well coated
3. add remaining nuts, seeds, cinnamon, salt, and orange zest
4. add remainder of syrup and mix well, until all is coated
5. spred mixture on cookie sheet and bake at 350 for 30 minutes.
6. might seem not completely set but let cool and the brittle will do the work
7. cool and break into pieces

I tried this recipe this morning, and it is truly delicious.  I had some extra pumpkin seeds ... so I added them as well.  Great recipe for a nutritious snack!!  Thanks for sharing - this one will be a favorite.

Jake,
I really enjoyed your nut and seed brittle! I especially love the idea of adding in dried fruit.  I am going to try this!! Thanks for the suggestion, BHM

It was spectacular. Great to take on hikes, or just in your purse or pocket for a snack on the run. Well done, Jake!
