Radish Salad with Cinnamon Vinaigrette
adapted from Barbara Feiner

Serves 6

Ingredients
Vinaigrette:
1/3 C Olive Oil
¼ C Lemon Juice
2 Tbsp Orange Juice
2 tsp Unfiltered Honey
1 tsp Ground Cinnamon
½ tsp Ground Cumin
1/8 tsp Ground Red Pepper
1/8 tsp Sea Salt
Salad:
3 Oranges, Supreme’d and cut into smaller bites.
1 Bunch Radishes, sliced
8 oz Spinach, using baby leaves or tearing larger leaves into smaller pieces.
¼ C almonds, chopped (soaked and dried almonds preferred)


Directions
1.    In small bowl, blend all vinaigrette ingredients except oil.  Whisk ingredients, while slowly adding the oil to incorporate then set aside.
2.    In large bowl, combine orange, radish and spinach.
3.    Toss salad mixture with dressing just before serving and garnish with nuts.

* I only used about half of the dressing, so use conservatively.

That vinaigrette sounds really interesting. It would be good on a hot summer evening over a cold salad. Have you tried it on other salads beside the radish salad?
