Adapted from Deceptively Delicious cookbook by Jessica Seinfeld

Ironically it still needs more tweaking so I made it healthier.

Tortilla Cigars

1 cup roasted chicken or turkey cubed
1/2 cup goat cheese shredded
1/2 cup yellow squash puree
1/2 cup carrot puree
1/4 teaspoon garlic powder
1/8 teaspoon salt
6 large sprouted wheat tortillas

Preheat the oven to 350 degrees. Line baking sheets with parchment paper.

In a large bowl, stir together the chicken or turkey, cheese, squash and carrot purees, garlic powder, and salt.

Cut the tortillas in half. Place one half on the work surface with the straight edge facing you. Spread about two tablespoons of the filling along that edge from one side to the other. Starting at the edge, roll the tortilla into a cigar shape, completely enclosing the filling. Place seam-side down on the baking sheet. Stuff and roll the rest of the tortillas.

Bake until the tortillas begin to brown, 4 to 5 minutes. Let cool slightly before serving.

Great recipe for party finger food at kids birthdays! They will love the sweetness of the veggie purees and that they can eat with their hands that they will never even realize how healthy these are for them.  Wink

Hi Angela,

I want to avoid wheat, so I found some teff tortillas that say "SONOMA" on the package, made by La Tortilla Factory.  I do think they might be supple enough to use.  They do have corn syrup solids and canola oil in them but their primary ingredients are tapioca flour, teff, and millet.  At least they're a step in the right, GF direction.  I am certain that one of us can perfect this recipe and market them.
