Recipe by Vanessa Atkinson

This is a great cleansing snack or even a meal if you put it over brown rice.
Prep time: 10 minutes
Eating time: Remember how important it is to chew!

Ingredients:  All vegetables being organic
1-2 avocados

2 baby bok choy; diced

1 lemon; used for its juices

Cilantro to taste;  I love cilantro for its fresh taste, antioxidant value and digestive aid properties.

1/4 red onion, diced

1 medium sized heirloom tomato, diced

1 can of black beans; soaked and cooked black beans recommended, but canned black beans are a great secondary source.

1/4 tsp cumin

1/4 tsp turmeric

Sprinkle of nutritional yeast

Ohsawa Organic Nama Shoyu to taste. 

Mix all ingredients together.   

You may keep the avocados in chunks or press them down with a fork.  Personal preference. 

You can add other ingredients to this recipe as well.  Corn and jalapenos can be a great addition.  This recipe is refreshing to the pallet and contains cleansing properties.

This recipe goes great with toasted whole wheat pita bread, or put it over brown rice for a lunch or dinner option.

I'm going to give this a try this evening. I just got a lot of bok choy in my organic veggie box and didn't know what to do with it. Thanks!
