(Serves

2 bunches dinosaur kale
3 avocados (sm - med)
2 lemons
2 T olive oil
1 cup each - red pepper, carrots, purple cabbage
3/4 tsp sea salt
1. Chop up kale into small pieces
2. Add avocado and salt
3. Crush with fingers (mash)
4. Let sit at least 30 minutes.
5. Add olive oil, lemon juice, & rest of veggies
6. Mix well (toss).
