Hi,

I'm new to the forum and am a student in the Natural Chef program.  As such, I'm not sure if I'm posting this question in the correct forum but...

My question concerns herbs and spices; is there a good reference on the health benefits of herbs and spices used for cooking?  It would be great if the guide could also outline herbs and spices that work together as well as not.

Hi,
There is some information on the culinary and therapeutic uses of herbs and spices in your natural chef handbook.  Look in the CF104 Ethnic Cuisines section, starting on pg. 241.  There are some charts that explain the herbs and spices used in these cuisines. Also, there is a pretty extensive chart of herbs and spices with both cooking and medicinal uses in CF107.2 Therapeutic Culinary Herbs and Spices section, starting on pg. 467.  Also, one of your text books,"The Improvisational Cook" has a section in the back on what herbs and spices work well together.  I believe it is labeled "flavor affinities."  Good luck!
