Hi there,  I just found out about a exercise specialist named Paul Chek.  He has some well written, easy to understand articles on his website at:

Scroll through and find "You are what you eat- processed foods"  It is great basic client education.  There are others, but I haven't reveiwed them.

Wow!  started reading the article on line and had to print it up!!  Thank you for sharing this info.   He really knows how to penetrate with his words.  A great reference and very loudly and simply put.  I've only had 4 days of classes a newbie to the NE/NC program.  I am finding it very disgusting what our government allows.  Also not surprised and feeling more and more validated as to why I am paranoid about certain things regarding our government.  The article really has validated for me why I like to grow my own veggies and eat whole foods.  It's alarming that there are so many chemicals consumed a day.  It would be interesting to see if it is documented how many chemicals were consumed a hundred years ago.

I'm glad going on the forum is encouraged through the homework assignments.  I may have not taken the time to check it out.

Paul Chek also put out a really great book that discusses many issues that apply to what we are learning in school.   It's called "How to Eat, Move, and Be Healthy."  It's really straight forward and simply written but detailed and well rounded. The book is a really great beginner's book in addition to filling in some areas that might be confusing.
