I would reccomend cooking in a little bit of water or broth instead of oil. That is how I cook all the time and it works great.  It then sort of steams the stir fry or whatever  you are cooking instead of frying it.  You can do it at a high heat and it really feels like you are cooking/sauteing the same way you would with high heat oil (which any oil will have some reaction to heat)  Also if you are a big fan of olive oil...consider putting it on after you cook the food.  It does give great flavor and the illusion that it was cooked in it Smiley  Hope that helps.

I agree with Becky, that cooking with a few tablespoons of vegetable broth (I like using Bauman's Mineral Broth recipe) for a short amount of time works great.  After draining any extra broth, add some olive oil, lemon juice, garlic, spices to taste; it's delicious.
One other thing, remember that at least 80% of canola has been genetically modified; I wouldn't recommend it, unless it was organic.
