Okay, people, here is my most favorite Black Bean dish to date:
1 lb dried black beans, (soaked for 24 hours rinsed and cleaned several times)
6 cups of low-sodium chicken broth or plain clean water
2 medium white onions
3 carrots, cleaned peeled and sliced
3 green (sour) apples
1 bunch of fresh parsley ( tie with strings into 4-6 small bunches/ sprigs)
1 cup of rum (one of my most favorite parts!!!)
1 1oz square of unsweetened chocolate ( my other favorite part)
1 tsp dried thyme leaves ( I prefer fresh leaves)
1 tsp dried basil leaves ( I prefer fresh leaves)
4 cloves of fresh garlic (another favorite part)
1 tsp grey or pink sea salt
1 tsp black pepper (or favorite pepper of choice)
1/4 cup of chopped parsley for decoration.
1. In a large bowl, soak beans for 24 hours. This will cut down cooking time to less than half the time needed.
2. In a soup or crockpot, combine drained beans, broth/water, onions chopped fine, carrot, apple parsley sprigs, rum, chocolate, thyme, basil and garlic. Cover pot and let simmer on low heat for 2-3 hours until beans are tender. If using crockpot (which is what I prefer for deeper taste), set on medium heat for 8-10 hours.
3. When beans are cooked, discard parsley, sprinkley chopped parsley and serve.
Great with corn bread!!!
