This dish is very attractive: it looks good, it is delicious, it contains a large amount of nutrients, and the best part - it is easy to prepare Smiley!

Ingredients:


1   Red onion thinly sliced
2 Tbsp. Lemon juice
1 Tbsp. cold pressed olive oil
1 cup  Quinoa
2 cups boiling water
Dash of salt
400 g  Green Beans


Directions:

Sprinkle red onions with lemon juice and olive oil. Put aside to marinate.
Heat the skillet, add quinoa and toast slightly. Add boiling water and salt, cover and  cook until done (approximately 10-15 min)
Meanwhile  boil green beans in salted water for about 7-10 minutes or until tender. Drain.  Once quinoa is cooked, mix together green beans, red onions and quinoa. You can serve it hot as a side dish or cold as a salad. If serving as a salad, add handful of pomegranate seeds.

Your recipe sounds totally delicious, and I cant wait to try it! 

just wanted to add a great trick (hope you dont mind) that I recently learned when preparing green beans that finishes them off nicely...

after boiling/steaming green beans:
drain beans in colander.
put hot empty pot back on stove and let heat from burner evaporate moisture inside pot.
add green beans back into hot dry pot.
toss beans around in hot pot for a very quick minute or so, until all the moisture has evaporated off of the beans from the heat of the hot pot (turn burner on low if necessary).
remove beans from pot, (cool on dry plate if depending on the recipe).   
and now the beans are "dried off" and wont make whatever they are being added to soagey, and the beans also stay crisper!   

this works great when making salad nicoise!
