The other day I made a guacamole with rhubarb and I've also added it to a butternut squash soup. Both turned out really good. Here is how I made the guacamole:
2 avocados
1 garlic clove
1/2 cup corn
1/2 of a orange bell pepper
2 tbsp red onion
1 rhubarb stalk
1 1/2 tbsp olive oil
1/2 tbsp lemon juice
salt, cumin and cayenne pepper to season
Please let me know how you will use it. Just like you I didn't want to make anything sweet and had a hard time finding a savory recipe.
Take Care!
