Mustard is one of those things I always resist buying because it's rare to find a good mustard without sugar added to it. I sorta stumbled upon this recipe haphazardly, but learned a bit about mustard seeds in doing so...

There are 3 main varieties, or colors, of mustard seeds, yellow, brown, and black. Yellow mustard seeds are the mildest, the black exhibit a pungent spicy taste and brown (commonly used in Dijon) is somewhere in between. When mixed with water they catalyze an enzymatic process that greatly enhances heat, however when mixed in a basic solution (vinegar) this enzymatic process is stopped and the sharp flavor is reduced.

Boil 1 cup apple cider vinegar
2 Tbs honey (if you're going for honey-mustard)
1/8 tsp turmeric
1/2 tsp salt

Pour into blender hot and add 1/2 - 3/4 cups yellow mustard seeds.
Blend immediately until thoroughly mixed.
Add 1 Tbs cold-pressed extra virgin olive oil and blend again.

Store in a glass jar in the fridge.
