I've always been a fan of roasted beets, but this is new fave. 

Raw Beet & Carrot Salad

3 medium beets, peeled
4 medium carrots, peeled if not organic
juice of 1 lime
1 T unrefined peanut oil
handful chopped cilantro
1 t freshly grated ginger
pinch sea salt

If you have a food processor, shred the beets and carrots with the grater blade.  If not, you can grate them by hand on a box grater.  Place  vegetables in a large bowl,  add remaining ingredients, and stir to combine.  Delicious at room temperature or cold.

Hi Simone,

I had my first NE class last Wednesday and Nori's cooking demonstration included most of the ingredients you have on your recipe. It's called "Beet Slaw for you Liver". I made it yesterday for a picnic. It was divine!

The ingredients are beets, carrots, apples, walnuts, coconut, orange zest and juice, ginger, olive oil and salt. The beets, carrot, apples, walnuts and coconut were grated in a food processor and seasoned with all the other goodies.

Glad this recipe is on here. I missed the first NE class a couple of weeks ago and heard it was really good. :-) So thanks!
