One baked sweet potatoe (3 1/2 oz serving)  provides about twice the RDA of Vit. A- over 8,800 IU-  and provides 42% of the RDA of Vit. C

Sweet Potato Butter:

2 garlic cloves
2 sweet potatoes
2 medium carrots
1/2 to 3/4 cup vegetable broth
1 Tablespoon extra-virgin olive oil

Freshly ground pepper to taste
Fine Sea Salt to taste
2 Tablespoons chopped cilantro (optional)
2 Tablespoons chopped parsley (optional)


Place unpeeled garlic cloves on aluminum foil and bake at 350 degrees F for about 10 min; until soft.  Boil unpeeled sweet potatoes until done.  Peel carrots, cut into large chunks  and boil until soft.  Drain Soft.

Drain carrots, peel sweet potatoes and put both in a food processor.

Squeeze in the baked garlic.  Add 1/2 cup broth and blend.  Wioth motor running, add oil and keep blending,  dding more broth util puree is firly smooth and full.  Add salt nd pepper to taste.  Dip can be made a day in advance and refrigereated.  Bring to oom empeatue and stir in the optional hebs right before serving with raw vegetables and bread sticks.
