Creamy Roasted Garlic Soup with Kale Chips

Kale Chips
1 T apple cider vinegar
2T olive oil
1 bunch dino kale
salt and pepper to taste
Soup
2-3 bulbs roasted garlic
½ c stock for sautéing
1 sweet onion
8c potassium broth (see Bauman recipes)
2 heads cauliflower
1 bay leaf
salt and pepper to taste
1. pre-heat over to 350
2. rip kale into 2” pieces and coat with vinegar, oil and salt and pepper to taste
3. roast kale for around 10 minutes, turning when the kale dries out and before it turns brown
4. if your garlic is not pre-roasted, cut the root end off of the bulb. Dip the cut part in olive oil, then wrap the whole bulb in parchment paper, then with tinfoil. Roast at 400 for around 20 minutes
5. dice the onion and sauté in stock until the onion is soft and transluscent.
6. Add the potassium broth, cauliflower and bay leaf. Bring to a boil, then reduce to a simmer When the garlic is ready, add that too. Simmer for 10 minutes or so, bringing the flavors together.
7. Once the cauliflower is soft, blend the soup in a Vitamix.
8. Serve with kale chips on top or on the side. Enjoy!
