Ingredients:1 Red onion thinly sliced
2 Tbsp. Lemon juice
1 Tbsp. cold pressed olive oil
1 cup Quinoa
2 cups boiling water
Dash of salt
400 g Green Beans
Directions:Sprinkle red onions with lemon juice and olive oil. Put aside to marinate.
Heat the skillet, add quinoa and toast slightly. Add boiling water and salt, cover and cook until done (approximately 10-15 min)
Meanwhile boil green beans in salted water for about 7-10 minutes or until tender. Drain. Once quinoa is cooked, mix together green beans, red onions and quinoa. You can serve it hot as a side dish or cold as a salad. If serving as a salad, add handful of pomegranate seeds.
