“When I arrived for the first class, I immediately felt comfortable and at home walking into the school.


I own Southern Exposure Salon Day Spa in Mendocino, CA. I have operated it for over 26 years. In my work, I have found wonderful ways to incorporated nutrition in with the spa beauty treatments I give. For true beauty comes from the inside out.

I have always loved learning about nutrition and eating whole foods. I continuously studied nutrition on my own. I have always known that packaged foods are poison to our bodies and that even the packaging itself is toxic. One day a spa client that I have known for 25 years told me she was going to nutrition school in Cotati, CA. I couldn’t wait to find out more about this school. Even though I lived three and a half hours away from Bauman College, I enrolled the next day!

When I arrived for the first class, I immediately felt comfortable and at home walking into the school. The foundation of the Bauman College program is all about Eating For Health food model. As I attended the classes, I learned how to use organic, whole foods and herbs therapeutically. I learned how foods fuel or affect each of the organs and systems of the body.

I have developed a business called Cellular Nutrition. I put together a 45 minute power point presentation on Cellular Nutrition which I have used to organize benefits for the Cancer Resource Center and Nutrition in the Schools in Mendocino, CA where I live. To raise money for these organizations, I set up venues and luncheons at The Mac Callum House Restaurant Hotel and Little River Inn and Restaurant.

I have hosted several organic healthy luncheons for fifty or so patrons who received a 70 page book on “Cellular Nutrition” as well as enjoyed lectures by Dr. Ed Bauman and Dr. Wayne Jonas generously sharing their expertise and knowledge. Dr. Ed Bauman worked with the chefs in the kitchens, developing menus and dishes based on recipes that complemented his lecture presentation. They were very successful events. We raised enough money to donate to both the Cancer Resources Center and the Nutrition in the Schools. We planted apple and pear trees at the Mendocino high school with the kindergarten class. It was touching to involve these kids in the planting these fruit trees that they will eventually be able to eat fresh organic fruit from when they attend high school. It provides a sense of healthy community life in Mendocino stretching out into the future from generation to generation.

Since I graduated, I have learned how to work with doctors regarding nutrition with Western Medicine. For instance, I was on a panel with Dr. Paul Abramson, Lois Senger RD, Dan Ladermann co/owner of Living Light Raw Food Culinary School, Karin Uphof MS,MH, CMT, and Richard L. Miller MA, PhD discussing "What Should I Eat". It was televised in front of a live audience of over a hundred people and shown on our local television station for over a month.

I am always learning more about nutrition and using it in my spa as well as my community work. I will continue with my Cellular Nutrition presentations and raising money for nutrition, working only with people who are really interested in a healthier lifestyle. I love working for the Vitality Fasting Retreats that Bauman College puts on. I hope I will always continue learning with Bauman College....
