Kidz Culinary Academy (KCA)

An idea whose time has come - familiar foods, fresh, and natural: the Eating for Health way

Watch our KCA Video by clicking the play button above.

In 2007, the Kidz Culinary Academy was created to address soaring childhood obesity rates in the United States. Ed Bauman, Ph.D. and Lynne Condé, PHN, MSN applied knowledge from 2006 research done on local at-risk populations to design a hands-on children’s culinary program. Natural Chefs and Nutritional Educators from Bauman College shared skills, recipes, music, movement, and art that sparked the desire children have to gain cooking skills while having great fun.

Our KCA research instrument measured the kid’s preferences of the recipes they made and brought home to share with their family. These recipes were collected in the KCA Cookbook, along with fruit and vegetable art, and educational information that explains how fresh foods nourish growing bodies, minds, and self-esteem.

Our research demonstrates that when children engage in KCA style cooking classes, they

  1. Touch, feel and taste the ingredients,
  2. Learn to use culinary tools safely and properly
  3. Have time to enjoy food
  4. Participate in meal planning
  5. Enjoy music, movement, and food art

...so that they are motivated to eat fresh wholesome meals and want to learn more.

The Kidz Culinary Academy (KCA) has been implemented into after-school programs in Sonoma County. It is scheduled as a Summer Camp program in Penngrove in June and July 2008. Program expansion into other CA counties, such as Santa Cruz, Marin, and Contra Costa, is underway.

As more children enjoy fresh local, natural food, there is real hope for some bright solutions to emerge from happy and healthy children who otherwise would fall prey to junk food, video overload and toxic TV.
