Mousse Makeover

This recipe is a nutrient-dense version of a classic chocolate mousse, in which the heavy cream, refined white sugar, and eggs are replaced with maple syrup and avocado.

Maple syrup is an unrefined, natural sweetener that contains high levels of nutrients, antioxidants, and phytochemicals. While avocados are high in fiber and monounsaturated fats and contain high levels of potassium, vitamins C and K, and folate. Additionally, raw cacao is high in iron—which is necessary for the production of red blood cells—and magnesium—which enhances nerve function and muscle structure.

The addition of warming spices like cinnamon and cardamom add depth and flavor to this delicious dessert. Top with toasted coconut, mint, or fresh berries for a simple, but elegant garnish.

Ingredients
  • 1 cup raw cacao powder
  • 4 ripe avocados
  • 1 1/4 cup maple syrup
  • 1 Tbs vanilla extract
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
Instructions
  1. In a high speed blender, combine all ingredients. Blend until smooth. Adjust salt and spices to taste.
Notes
