On-The-Go Breakfast Ideas [Vegan]

Hi Guys!

So lately I've been struggling a little bit with different yummy on-the-go breakfast ideas. I'm starting this thread as a place to share and receive inspiration for yummy breakfast ideas! I'll start with one of my favorites:
Vegan Overnight Oats [2 servings]
1/2 cup oats of choice [I love to use steel-cut]
2 tbsp flaxseed meal
1 cup milk of choice [I love cashew]
1 medium banana, mashed
1/2 tsp cinnamon
1/2 tsp vanilla bean powder [or extract]
Mix all ingredients together and pour into two jars. Keep jars in fridge until ready to eat. When ready to eat, top with whatever you like! I love mixed berries and coconut flakes, raisins and walnuts, or coconut flakes and cacao nibs. Enjoy!

Hi Kaiayue,

Thanks for starting this thread.  I also struggle with breakfast ideas specially for my kids.  Your recipe sounds yummy, I will give it a try.

Here's one that has worked for my family.

Oatmeal Banana Pancakes:
2 eggs
1 banana
1/2 cup oats
1/4 cup apple sauce
1 tsp. vanilla
1/2 tsp. cinnamon
_ Blend oats in blender until ground
- add other ingredients
- mix until blended
- cook on buttered pan

We make 2 -3 batches at a time and then place the pancakes in the fridge.  I like them cold right out of the fridge but my kids like them warm.  In the morning it's so easy to heat them up in the microwave and you are ready to go. 
I add walnuts  once I put them on the pan, it gives the pancakes a nice crunch.
