Simple deliciousness in a cup

Are you a chocolate connoisseur? A lover of cupcakes? Are you suddenly craving chocolate AND cupcakes? Well, here’s a deliciously simple recipe to satisfy those cravings. Dairy, egg, nut, and sugar free to boot!  The combination of dark chocolate and coconut oil is both delicious and nutritious.

Studies have shown that dark chocolate may help lower blood pressure, improve blood flow, and even prevent the formation of blood clots. Dark chocolate may also increase blood flow to the brain, improving cognitive function. Coconut oil is a stable oil that doesn’t break down easily at high temperatures like other oils do. It doesn’t go rancid easily and has amazing nutritional properties including lowering cholesterol and blood pressure with its high lauric acid. Studies have even shown that coconut oil may help increase thyroid health.

Here’s a recipe that both wows the crowds and takes less than an hour to make!

Coconut Chocolate Cups

Ingredients:

  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil
  • 2 Tbs. raw honey
  • Pinch of salt
  • Cupcake liners

Method:

1. In a double bowler, whisk together all ingredients over low heat until smooth. Remove from the heat to thicken for a minute or two. The texture you are going for is a semi-thick consistency, similar to that of warmed frosting.

2. Using a small spoon, drop spoonfuls of the chocolate mixture into the cupcake liners. Now here’s the fun part! Using an artist or pastry brush, paint the liner sides, using the middle spoonful as your pallet. Be sure the ‘paint’ goes on thick.

3. Stick in the freezer until hard. This may take 10-30 minutes depending on the freezer. For more solid cups, you may want to paint on a second layer after the first dries. After the layers harden, carefully peel away the cupcake liners. If you are making these for a party, make extra. You will have some break on you. If you want to get fancy, drizzle white chocolate or coconut onto the cups.

4. Finally, add your favorite filling! Fruit, mouse, or even more chocolate works great.
